The best pizza in all of Italia is alla Napoletana, which is rare in NJ. The authentic Naples style pizza calls for a demanding recipe and a difficult cooking process.
Two years ago, Undici owner Victor Rallo opened up his restaurant with the intention of recreating traditional Naples pizza, the best pizza in the world. Unsure on how he was going to do this, he partnered with Anthony Mangieri of Una Pizza Napoletana to help put pizza alla Napoletana in NJ.
Mangieri had become world famous for being one of the best pizza makers in the country and Undici Restaurant had the chance to work with him before his move from New York City to San Francisco. The first step? A wood only burning oven to create la pizza Napoletana.
“You can’t make, in my opinion, the same flavor with coal or with gas,” says Mangieri. “There’s nothing beautiful about it. The heat from a coal oven is not gentle. It’s very dry, it’s very overpowering. ”
With a pizza oven that runs solely on wood, the two pizza experts hunkered down to create the best pizza of New Jersey. Two weeks and 500 pizzas later, they succeeded. The sought after pizza Napoletana finally came to New Jersey, topped off with the famous Undici sauce and bufala mozzarella.
“The pizza is now authentic, using all Italian ingredients,” said Rallo. “Our customers are going crazy over it.”
Customers and critics alike keep coming back to Undici for the best pizza in NJ, pizza Napoletana. The New York Times said the pizza is “terrific” and “you can hardly go wrong with combinations like arugula, grape tomatoes, mozzarella, and more that prosciutto.”
The Asbury Park Press raved that Undici’s la pizza Napoletana can satisfy even the harshest pizza critics of NJ.
“If you have not had one,come in and try one,” said Rallo. “It goes perfectly with a glass of Italian red wine.”
